Hot cross buns certainly conjure up memories of Easter time for me. With sweet smelling spices, sultanas and a sticky glaze, the hot cross bun is synonymous with Easter. Sometimes it can be a welcome change to jazz up a Victoria sponge cake with an alternative flavour by using fruits such as blueberries or raspberries. In the summer months, when classic British fruits are in season, I love to add fresh fruit to my baking recipes. Lasagne has got to be one of my favourite family meals, it’s a classic dish in our home. Today, we usually make ours with vegan quorn mince.
