My Rainbow Sprinkle Cookies are so good you just have to try baking them! Colourful and light in texture, they are extremely moreish yet not too indulgent. Great for parties, bake sales and school fairs, these sprinkle cookies are a winning snack! My children love adding their own sprinkles and making patterns and shapes with them. To make 22 Rainbow Sprinkle Cookies, you will need the following ingredients:
1. 100g butter, softened
2. 100g caster sugar
3. 200g plain flour
4. 1 tsp vanilla extract
5. 1/2 tsp baking powder
6. 1 medium sized egg
7. Sprinkle toppings such as hundreds and thousands, edible glitter, chocolate chips, edible stars and so on.
Step 1
In a medium sized mixing bowl, combine the butter, caster sugar and vanilla extract. Whisk in the egg and then fold in the sifted flour and baking powder.
Step 2
Once your mixture has come together to form a dough, divide it into small golf ball sized portions and flatten these out with your hands onto the baking trays. It is important to try and give each cookie some room to spread out when baking on the tray.
Step 3
Now we can get creative before baking the cookies! Sprinkle all your colourful rainbow toppings onto your cookies and lightly press them into the surface to help them stay in place. (You could even mix some of your toppings into the batter before you divide it into balls to add extra crunch to your cookies!)
Now bake in the middle shelf of the oven at Gas Mark 5/190C/375F for 8-12 minutes until golden. Enjoy!
