MAIN: Salmon en Croûte

Salmon en Croute is a delicious dish and goes well with new boiled potatoes, seasonal vegetables and a white, creamy sauce. I use a base of tasty mushrooms inside my salmon en croute and I will also walk you through my easy white sauce recipe here too.

The ingredients you will need to make this Salmon en Croute recipe are as follows:

1. Three or four fresh salmon fillets

2. One sheet of short-crust ready to roll pastry

3. One small punnet of button mushrooms (approximately 150g)

4. A little butter for the mushrooms

5. A pinch of salt and pepper

6. A pinch of parsley and basil (both dried or fresh) and chilli powder

7. Lemon juice

 

For the white sauce:

1. 3 tbsp plain white flour

2. 200ml semi-skimmed milk (or milk of your choice)

3. 1 1/2 tbsp butter

4. A pinch of salt and pepper

5. A pinch of parsley (dried or fresh)

Step 1

Firstly, wash and dice the button mushrooms and fry them in a little butter in a medium-sized pan until they turn slightly golden in colour.

Lightly flour your worktop and unroll the sheet of shortcrust pastry. Place the mushrooms along the pastry about two thirds of the way down it, width ways. (See the picture above). Be sure to also leave a slight gap at both ends as we are going to fold the pastry over on itself. Add a pinch of salt, pepper and basil.

Step 3

In a shallow pan, fry the salmon fillets in a little cooking oil. Add salt, pepper, chilli powder, parsley, basil and lemon juice to add flavour. After 15 minutes, the salmon fillets should be cooked through. (But remember that they will be cooked again the oven too).

Now add them on top of the mushrooms and pastry. You may wish to remove the skins at this point as well.

Step 4

Now fold the pastry over to encase the contents. You may wish to use a little water (or egg) to help seal in the gaps and to ensure that the pastry sticks together. 

Next, I like to use a fork to crimp along the edges of the pastry. I also use a knife to lightly score the top of the salmon en croute to help air to get inside it and to cook the contents more thoroughly.

Bake your salmon in the oven at Gas Mark 5/190C/375F for around 25 minutes until the pastry starts to turn a soft golden colour.

Step 5

Whilst the Salmon en Croute is cooking, it’s time to make the accompanying white sauce. Simply mix the milk, plain flour and butter together in a medium sized saucepan over a low heat. Then add salt, pepper and the parsley to taste.
